A process for producing a symmetrical triglyceride, characterized by subjecting a medium-chain fatty acid triglyceride and a long-chain fatty acid triglyceride to random transesterification, as a first reaction, with the aid of an enzyme or chemical catalyst to obtain reaction products comprising triglycerides having the medium-chain fatty acid and the long-chain fatty acid as the constituent fatty acids, subjecting the reaction products and an alcohol monoester of a medium-chain fatty acid to transesterification, as a second reaction, with the aid of an enzyme having specificity for sn-1,3 positions, subsequently removing the medium-chain fatty acid alcohol monoester and the long-chain fatty acid alcohol monoester from the reaction products yielded by the second reaction to obtain the target symmetrical triglyceride having the medium-chain fatty acid in each of the sn-1,3 positions and the long-chain fatty acid in the sn-2 position. By the process, a high-purity symmetrical triglyceride having a medium-chain fatty acid in each of the sn- 1,3 positions and a long-chain fatty acid in the sn-2 position can be industrially efficiently produced.

Un procédé de production d'un triglycéride symétrique se caractérise en ce qu'on soumet un triglycéride d'acide gras à chaîne moyenne et un triglycéride d'acide gras à chaîne longue à une transestérification aléatoire, en tant que première réaction, à l'aide d'une enzyme ou d'un catalyseur chimique afin d'obtenir des produits de réaction comprenant des triglycérides comprenant en tant d'acides gras constitutifs, l'acide gras à chaîne moyenne et l'acide gras à chaîne longue; qu'on soumet à une transestérification, en tant que deuxième réaction, les produits de réaction et un monoester d'alcool d'un acide gras à chaîne moyenne, à l'aide d'une enzyme présentant une spécificité pour les positions sn-1,3; qu'on élimine ensuite le monoester d'alcool d'acide gras à chaîne moyenne et le monoester d'alcool d'acide gras à chaîne longue des produits de réaction issus de la deuxième réaction pour obtenir le triglycéride symétrique désiré comprenant l'acide gras à chaîne moyenne à chacune des positions sn-1,3 et l'acide gras à chaîne longue à la position sn-2. A l'aide de ce procédé, on peut produire efficacement à l'échelle industrielle, un triglycéride symétrique de grande pureté comprenant un acide gras à chaîne moyenne à chacune des positions sn-1,3 et un acide gras à chaîne longue à la position sn-2.
