The present invention relates to a process for producing arachidonic acid. In one embodiment, Mortierella sect. schmuckeri microorganisms are cultured in fermentation medium, preferably containing a component of a complex nitrogen source. Further disclosed is a food product which includes Mortierella sect. schmuckeri microorganisms or lipid isolated from such microorganisms to enhance the arachidonic acid content of the food product.
La présente invention a trait à un procédé permettant de produire de l'acide arachidonique. Dans l'une de ses applications, des microorganismes, Mortierella sect. schmuckeri, sont mis en culture dans un milieu de fermentation comportant, idéalement, une composante d'une source d'azote complexe. On présente également un produit alimentaire renfermant les microorganismes de l'espèce Mortierella sect. schmuckeri ou un lipide isolé de ces microorganismes qui accroît la teneur en acide arachidonique du produit alimentaire.
