A method for producing a coconut water beverage having a pH below 4.5 by adding a food grade acid to coconut water. The method coverts coconut water from a low~acid food to a high-acid food which allows the coconut water to be subjected to less severe commercial sterilization processing and preserves the natural taste and aroma of the coconut water. The present invention is also directed to a blended beverage comprising coconut water and fruit juice and having natural isotonic properties.
L'invention concerne un procédé permettant de produire une boisson à base d'eau de coco présentant un pH inférieur à 4.5, par adjonction d'un acide alimentaire à de l'eau de coco. Le procédé décrit dans cette invention consiste à transformer de l'eau de coco, qui est un produit alimentaire peu acide, en un produit alimentaire très acide, ce qui permet de soumettre l'eau de coco à un processus de stérilisation commerciale moins rigoureux et de conserver le goût naturel et l'arôme de l'eau de coco. La présente invention concerne également une boisson à base de mélanges contenant de l'eau de coco et un jus de fruits, et présentant des propriétés isotoniques naturelles .
