ABSTRACT OF THE DISCLOSURE A method is provided for quantitative measurement of fat in a fat-containing sample by an infrared absorption technique, comprising transmitting infrared light through the sample, deter- mining the infrared absorption of the sample in a waveband charac- teristic of saturated carbon-hydrogen bonds, and selectively quan- titatively assessing the fat content of the sample on the basis of said determination. This method appears to be more accurate and reliable than similar techniques relying on carbonyl absorption bands.
