The method for restructuration of raw meat for production of restructured raw meat by addition to the meat of transglutaminase comprises the further addition of phosphate (optional) and sodium chloride, with a subsequent temperature treatment. Hereby the cohesion and hardness of the restructured raw meat is improved, and it can be sold as a refrigerated meat product.

Un procédé de reconstitution de viande crue destiné à la production de viande crue reconstituée par l'addition de transglutaminase à la viande consiste à y ajouter en outre du chlorure de sodium et, éventuellement, du phosphate, et à soumettre ultérieurement la viande à un traitement thermique. La cohésion et la fermeté de la viande ainsi reconstituée est en conséquence améliorée, la viande pouvant alors être vendue comme produit congelé à base de viande.
