Method and device for scaling fish and removing its internal organs by continuously advancing the fish along a treatment path while simultaneously exposing the fish body to high-pressure water jets (26). During treatment the fish is positioned vertically, with its belly downwards. The forces (14, 46, 48) required for holding and transporting the fish are applied laterally to the upper part of the fish body, which is harder, without however touching the belly area, which is soft and therefore is left free. Descaled fish proceeds to a position for cutting the belly area and removing internal organs. The treatment is carried out in the same device, efficiently and without deterioration of gustatory properties.

L'invention se rapporte à un procédé et à un dispositif permettant d'écailler du poisson frais et de retirer les organes internes du poisson. Ledit procédé consiste à faire progresser de manière continue le poisson le long d'un chemin de traitement tout en exposant simultanément le corps du poisson à des jets d'eau à haute pression (26). Pendant le traitement, le poisson est disposé verticalement avec le ventre orienté vers le bas. Les forces nécessaires (14, 46, 48) pour maintenir le poisson et le transporter sont appliquées latéralement uniquement sur la partie supérieure du corps du poisson, qui est plus dure, et non sur le ventre du poisson, qui est mou et ne subit par conséquent aucun contact. Le poisson sans écailles est ensuite amené jusqu'à une position de découpe de sa partie ventrale et de retrait des organes internes. Ce traitement est effectué dans le même dispositif, efficacement et sans atteinte aux caractéristiques gustatives.
