An improved method to produce a dough sheet having improved uniform properties in a high-speed manufacturing environment. In accordance with one embodiment of the present heeter nip, and improved control of dough properties across the sheeting improved width of the dough sheet including, but not limited to, uniform thickness, uniform work input, uniform moisture content, uniform emulsifier content, and uniform dry ingredient content. In a preferred embodiment, the improvements described herein enable the high-speed production of stackable chip products. Improved mixing and control of process conditions in dry and wet upstream mixers enable such production.
Cette invention concerne un procédé amélioré permettant de produire un feuillet de pâte présentant de meilleures propriétés uniformes dans un environnement de fabrication à haute vitesse. Selon un mode de réalisation de la présente invention, le système de laminage implique un meilleur contrôle des particules de pâte au niveau de l'écartement du laminoir, ainsi qu'un meilleur contrôle des propriétés de la pâte sur la largeur du feuillet de pâte visant notamment à obtenir une épaisseur uniforme, un pétrissage uniforme, une teneur en humidité uniforme, une teneur en émulsifiant uniforme et une teneur en ingrédients secs uniforme. Dans un mode de réalisation préféré, les améliorations ci-décrites permettent de produire à haute vitesse des produits en copeaux empilables. Un malaxage amélioré et un meilleur contrôle des conditions de processus dans des mélangeurs amonts à sec et par procédé humide permettent d'obtenir une telle production.
