Disclosed is a method for quenching the aldyhyde products of lipid autoxidation. The method includes providing a source of amino acids that are capable of binding the aldyhyde products to thereby quench them. The method finds particular use in the food industry wherein the quenching of autoxidation products is useful in maintaining food appeal to consumers and food product shelf life, especially when incorporating long chain polyunsaturated fatty acids into the food product.

La présente invention concerne un procédé pour neutraliser les produits d'aldéhyde d'autooxydation lipidique. Le procédé consiste à fournir une source d'acides aminés capable de se lier aux produits d'aldéhyde pour les neutraliser. Le procédé trouve des applications en particulier dans l'industrie alimentaire, la neutralisation de produits d'autooxydation étant utile pour maintenir l'intérêt des consommateurs pour les aliments et la durée de conservation des produits alimentaires, en particulier lorsque le produit alimentaire contient des acides gras polyinsaturés à longue chaîne.
