This invention concerns a method for extracting at least one protein present in milk, the said protein showing an affinity for calcium ions in complexes or free, in the said milk. It comprises the following steps: a) freeing the protein by precipitating the calcium compounds obtained by contact of the milk with a soluble salt, whose anion is chosen for its capacity to form the said insoluble calcium compounds in such a medium, in order to thus obtain a liquid phases that is enriched with the protein, b) separation of the enriched liquid phase into the protein precipitate with the calcium compound, the said liquid phase being moreover separated into a lipid phase and a non-lipid aqueous phase comprising the protein and c) collection of the aqueous non-lipid phase comprising the protein.
L'invention concerne un procédé d'extraction d'au moins une protéine présente dans du lait, ladite protéine présentant une affinité pour les ions calcium complexés ou non dudit lait, comprenant les étapes suivantes consistant à : a) libérer la protéine par la précipitation de composés de calcium obtenue par mise en contact du lait avec un sel soluble, dont l'anion est choisi pour son aptitude à former dans un tel milieu lesdits composés de calcium insolubles, pour ainsi obtenir une phase liquide enrichie en la protéine, b) séparer la phase liquide enrichie en la protéine du précipité de composés de calcium, ladite phase liquide étant en outre séparée en une phase lipidique et en une phase aqueuse non lipidique comprenant la protéine, et c) récupérer la phase aqueuse non lipidique comprenant la protéine.
