The invention relates to a method for the production of potato juice based products by means of food technology, characterised by the following steps; preparing the squeezed potato juice, filtering off the fibres or starch residues by means of a microfilter, preferably ultrafiltration the filtrate, electrodialysis of the microfiltrate or the ultrafiltrate and optionally, drying the electrodialysate by adding carrier substances containing silicates.

L'invention concerne un procédé d'obtention par des techniques relatives aux produits alimentaires de produits à base de jus de pomme de terre, lequel se caractérise par les étapes suivantes : préparation d'un jus de pression de pomme de terre ; retrait par filtration de résidus de fibres ou d'amidon au moyen d'un microfiltre ; de préférence, ultrafiltration du filtrat ; électrodialyse du microfiltrat ou de l'ultrafiltrat ; et, éventuellement, séchage de l'électrodialysat avec addition de substances porteuses contenant des silicates.
