The worn, in use, blade portions of a strip-steel knife are exchanged continuously or periodically with sharp strip-steel knives during the flake manufacturing operation. The feed of the strip-steel knives is preferably time-dependent and/or dependent on the energy consumption of the apparatus. Disposed longitudinal- ly of the knife-ring are one or several magazines for supplying or/and receiving the strip-steel knives.
