On en ferme le fromage dans un emballage mixte com- prenant une couche intérieur en fibres non tissées absorbante de l'humidité mise directement en contact avec le fromage et une couche extérieure étanche, on place le tout dans une boîte fermée hermétiquement et on pasteurise à 100°C pendant 50 mn, après quoi le fromage se conserve dans cette boîte sans altération de son apparence ni de ses qualités organoleptiques pendant une durée de six mois.
