The invention relates to a method for preparing a starch-containing product in particle form, the product obtained and the use of the product. The starting material comprises material that contains starch granules and lipids, such as fat-containnig oat meal or avenaceous starch separated from grains. According to the invention, the material is moistened, energy is exerted on it, partly damaging the starch ganules so as to release the amylose and amylopectin thereof, the obtained plastic mass is dried and, finally, the dried mass is disintegrated, for example, by grinding so as to form product particles. The starch granules can be damaged by means of an extruder or an expander. The process may constitute the granulation of the oat meal or another starch- containing flour. Fat can be added to the material that is processed, binding itself to the damaged starch. The product can be used in foostuffs, such as bakery products.

L'invention concerne un procédé destiné à préparer un produit contenant de l'amidon sous forme particulaire, le produit ainsi obtenu et l'utilisation dudit produit. La matière de départ comprend une matière renfermant des granules d'amidon et des lipides, tels qu'une farine d'avoine contenant de la graisse ou de l'amidon d'avoine séparé des grains. Selon l'invention, le procédé consiste à humidifier cette matière, à la soumettre à une énergie, ce qui endommage partiellement les granules d'amidon, d'où la libération de son amylose et de son amylopectine, à sécher la masse plastique obtenue, puis à désintégrer la masse séchée par broyage, par exemple, de sorte à former les particules du produit. Les granules d'amidon peuvent être endommagés au moyen d'une extrudeuse ou d'un rouleau. Le procédé permet la granulation de la farine d'avoine ou d'une autre farine contenant de l'amidon. De la graisse peut être ajoutée à la matière traitée et se lie à l'amidon endommagé. Ce produit peut être utilisé dans des aliments tels que des produits de boulangerie.
