The invention relates to a method for the production of an optionally preserved, water- and/or oil-containing foodstuff such as vegetables, pulses and fruit, wherein a casein compound which is soluble in water and/or oil or has been dissolved in water and/or oil is added to the foodstuff before, during or after the preparation or sterilisation, a closed container, containing a foodstuff which has been prepared according to said method, and a foodstuff which has been prepared according to said method, as well as the use of a casein compound which is soluble in water, or has been dissolved in water, to improve the appearance of optionally preserved water- and/or oil-containing products.
Procédé de production d'un produit alimentaire éventuellement conservé renfermant de l'eau et/ou de l'huile, par exemple des légumes, des légumineuses et des fruits, selon lequel on ajoute au produit alimentaire un composé de caséine soluble dans l'eau et/ou l'huile, ou mis en solution dans de l'eau et/ou de l'huile, avant, pendant ou après la préparation ou la stérilisation; récipient fermé contenant un produit alimentaire préparé selon ledit procédé; produit alimentaire préparé selon ledit procédé; et utilisation d'un composé de caséine soluble dans l'eau ou mis en solution dans l'eau, dans le but d'améliorer l'aspect de produits éventuellement conservés renfermant de l'eau et/ou de l'huile.
