The preparation and use of nucleic acid fragments encoding plant fatty acid modifying enzymes associated with modification of the delta-9 position of fatty acids, in particular, formation of conjugated double bonds are disclosed. Chimeric genes incorporating such nucleic acid fragments and suitable regulatory sequences can be used to create transgenic plants having altered lipid profiles. The preparation and use of nucleic acid fragments encoding plant fatty acid modifying enzymes associated with formation of a trans delta-12 double bond also are disclosed. L'invention concerne la préparation et l'utilisation de fragments d'acide nucléique codant pour un acide gras végétal modifiant les enzymes associés à une modification de la position delta-9 des acides gras, et notamment à la formation de doubles liaisons conjuguées. Des gènes chimères comprenant ces fragments d'acide nucléique et des séquences régulatrices appropriées peuvent être utilisés pour créer des plantes transgéniques présentant des profils lipidiques modifiés. L'invention concerne également la préparation et l'utilisation de fragments d'acide nucléique codant un acide gras végétal modifiant les enzymes associés à la formation d'une double liaison trans-delta-12.
