The invention relates to a method for the production of fresh cereal-flour-based patties, characterized in that it comprises the following steps: (a) cereal-flour-based dough is placed on a conveyor belt consisting of a web of fiber-glass material impregnated with polytetrafluorethylene; (b) the dough is steam-cooked; (c) optionally, the dough cooked in step (b) is placed on a conveyor; (d) optionally, la said dough is cut or pre-cut.

L'invention concerne un procédé de fabrication. Procédé de fabrication de galettes fraîches à base de farine de céréales caractérisé en ce quil comprend les étapes suivantes : (a) le dépôt d'une pâte à base de farine de céréales sur une bande de transport constituée d'un tissu de fibre de verre imprégné de polytétrafluoréthylène ; (b) la cuisson de ladite pâte par la vapeur ; (c) éventuellement le dépôt de ladite pâte cuite à l'étape (b) sur un convoyeur ; (d) éventuellement la découpe ou la pré-découpe de ladite pâte.
