Method for the production of dairy products involving at least one ultrafiltration and ripening stage (1) and characterized by at least one stage in which the product is subjected to pressure, downstream of a homogenization stage (4), followed by at least one distribution stage whereby the product passes from a liquid phase to a solid phase, and by at least one expansion or bulging stage (16) for forming the dairy products, and finally at least one stage where the solid product is cut into portions.

Procédé d'élaboration de produits laitiers muni d'au moins une étape d'ultrafiltration (1) et de maturation (2), caractérisé en ce qu'il comporte au moins une étape de mise sous pression dudit produit, en aval d'une étape d'homogénéisation (4), suivie d'au moins une étape de répartition permettant d'obtenir le passage d'une phase liquide à une phase solide du produit, puis d'au moins une étape d'expansion (16) ou de détente pour le formage, et enfin d'au moins une étape de découpe en portions dudit produit solide.
