METHOD FOR THE PRODUCTION OF FISH MEAT POWDER RETAINING FUNCTIONAL PROPERTIES OF FRESH FISH MEAT Abstract of the Disclosure A fish meat slurry is obtained by finely mincing fresh fish meat or frozen ground fish meat (frozen SURIMI) in conjunction with a water-soluble protein and converting the resulting blend into the form of a slurry having a sufficiently low viscosity to be easily spray dried to form fish meat powder. Previously, such slurries have been too viscous to spray dry easily, but the addition of the water-soluble protein reduces the viscosity.
