The invention relates to a method for the production of sausage products based on fish meat, wherein the fish meat is processed with ice to give a starting meat. The invention proposes that the ice is at a temperature below -10°C and that at least part of the fish meat comes from a channel catfish of the superorder Heterobranchia.
L'invention concerne un procédé de fabrication de saucisse à base de chair de poisson, la chair de poisson étant préparée sous forme de chair à saucisse de base avec de la glace. Selon l'invention, la glace présente une température inférieure à 10°C et au moins une partie de la chair de poisson provient de silure d'eau douce de la classe supérieure des hétérobranchus.
