The invention relates to a method for producing fat and/or oil with a modified fatty acid distribution in the glycerides by heterogeneously catalyzed transesterification. According to the inventive method, the fat and/or oil of biological origin to be transesterified is/are reacted in the presence of a catalyst from a metal salt of an alkaline amino acid or an amino acid derivative. By using the catalyst, the drawbacks of conventional transesterification methods can be eliminated.

L'invention concerne un procédé de fabrication de graisse et/ou d'huile avec une modification de la répartition des acides gras dans les glycérides par transestérification catalysée de manière hétérogène. Ledit procédé comprend la transformation de la base biologique de la graisse et/ou de l'huile à transestérifier en présence d'un catalyseur constitué d'un sel métallique d'un aminoacide basique ou d'un dérivé d'aminoacide. Les inconvénients d'un procédé de transestérification classique sont éliminés grâce à l'utilisation dudit catalyseur.
