ABSTRACT OF THE DISCLOSURE The method consists in subjecting the raw material to enzymatic hydrolysis by means of at least one proteolytic enzyme capable of reproducing the proteic digetsion occurring in vivo in the human body; subjecting the thus obtained hydrolyzate to at least one ultrafiltration step on membranes which allow all the hydrolyzate peptides to pass in the permeate; adding the permeate with at least one bivalent cation salt apt to for aggregates with the phosphorylated fraction of said peptides, this leading to a solution which contains essentially phosphopeptide aggregates and non phosphory- lated peptides; and separating by at least one ultra- filtraqtion step the non phosphorylated peptides from the phosphopeptides, the latter being of larger particle size, by bringing the solution into contact with at least one membrane capable of retaining the phosphopeptides. The thus obtained products are useful as aliments for dietetic or therapeutic nutrition as well as medicines.
