The invention relates to a method and device for accelerating the ageing of a wine contained in an open or sealed container. The inventive method consists in bringing a treatable wine into contact with a copper, gold or silver alloy element whose surface and composition are defined in such a way that it is possible to carry out an accelerated and calibrated wine oxidation-reduction operation. Said invention enables to produce a standard for measuring the wine ageing aptitude and ensuring the wine tasting in the best conditions.
Procédé et dispositif de vieillissement accéléré d'un vin contenu dans un récipient ouvert ou fermé comportant les étapes suivantes ; mise en contact du vin à traiter avec un élément d'alliage de cuivre, d'or et d'argent présentant une surface et une composition définie de manière à réaliser une opération d'oxydoréduction accélérée et calibrée du vin. On peut ainsi réaliser un étalon permettant de mesure l'aptitude d'un vin au vieillissement mais également assurer la dégustation d'un vin dans les meilleures conditions.
