The invention relates to a method for treating foodstuffs, particularly for preserving fresh sausage or meat products involving the time-limited influence of temperature and/or pressure or high pressure and for subsequently bringing the products to market. The already packaged products are subjected to the treatment step and a stretchable film having residual elastic or permanently elastic properties is used for at least portions of the packaging material.

L'invention concerne un procédé pour le traitement de produits alimentaires, notamment la conservation de charcuterie ou de viande fraîche, par application limitée dans le temps de température et/ou de pression ou haute pression, ainsi que pour la mise en circulation consécutive de la marchandise. Selon l'invention, la marchandise est soumise à l'étape de traitement alors qu'elle est déjà emballée, un film extensible à élasticité résiduelle ou permanente étant utilisé pour au moins des parties du matériau d'emballage.
