A method for treating a biological organism in a medium, comprising heating the medium containing the organism by a temperature of at least about 2 ~C at a rate which exceeds a relaxation rate of a cellular membrane of that organism, under such time and temperature conditions which do not thermally denature a substantial portion of the biological proteins. L'invention concerne un procédé de traitement d'un organisme biologique dans un milieu, qui consiste à augmenter d'au moins environ 2 ·C la température du milieu contenant l'organisme, à une vitesse supérieure à la vitesse de relaxation d'une membrane cellulaire de cet organisme, dans des conditions temporelles et thermiques qui ne dénaturent pas thermiquement une partie substantielle des protéines biologiques. Elle porte aussi sur un procédé de traitement d'un organisme biologique dans un milieu, qui consiste à augmenter d'au moins environ 2 ·C la température du milieu contenant l'organisme, à une vitesse supérieure à la vitesse de relaxation d'une membrane cellulaire dudit organisme, dans des conditions temporelles et thermiques qui ne dénaturent pas une partie substantielle des protéines biologiques.
