A method of boiling wort which makes it possible to improve the efficiency of separation and exhalation of a wort boiler used in the preparation of beer or sparkling wine. This method is employed in the mashing step and is characterized by enhancing the extent of liquid-gas contact between wort and a gas phase in the boiler, thereby enhancing the efficiency of evaporation and exhalation of substances from the wort during the boiling and reducing the thermal energy necessary for the boiling.
Cette invention se rapporte à un procédé pour bouillir du moût de brasserie, qui permet d'améliorer l'efficacité de séparation et d'exhalaison d'un bouilleur à moût utilisé dans la préparation de bière ou de vin mousseux. Ce procédé est utilisé dans l'étape d'empâtage et se caractérise par l'amélioration de l'ampleur du contact liquides-gaz entre le moût et la phase gazeuse dans le bouilleur, ce qui améliore l'efficacité d'évaporation et d'exhalaison de substances du moût pendant la phase de bouillage et réduit l'énergie thermique nécessaire pour la phase de bouillage.
