It is intended to provide a method of identifying a gene of a yeast for brewing which participates in the flavor of an alcoholic drink and control the expression of this gene to thereby enable the production of an alcoholic drink having a desirable flavor. To achieve the above object, a method of identifying a yeast for brewing by using a gene analysis means comprising a DNA array optionally together with two-dimensional electrophoresis, a DNA array having the thus identified gene attached thereto, and a method of selecting a yeast for brewing with the use of this DNA array are provided.

Pour obtenir l~objet ci-dessus, l~invention décrit un procédé d~identification d~une levure de brassage qui comprend une méthode d~analyse d'un gène comprenant un réseau d'ADN éventuellement conjointement avec une électrophorèse bidimensionnelle, un réseau d'ADN auquel est attaché le gène ainsi identifié ainsi qu~un procédé de sélection d~une levure de brassage par l~utilisation de ce réseau d~ADN.
