A B S T R A C T A method for drying carbohydrate solutions, including complex carbohydrate solutions, to form stable, solid, substantially anhydrous particulate products comprising the steps of co-mingling the carbohydrate solution with recycled particulate product solid to form a particulate admixture, drying the particulate admixture in a dielectrically heated drying zone below the melting point of the particulate admixture to form the stable, solid, substantially anhydrous product, removing the anhydrous product from the drying zone, recycling part of the anhydrous product and recovering the remaining part of the anhydrous product.
