METHOD OF ENCAPSULATING WATER-SOLUBLE MATERIALS Abstract of the Disclosure Water-soluble materials are encapsulated in water-soluble wall-forming materials by initially emulsifying them in a water- insoluble oil using a specific surfactant - polyoxyethylene (20) sorbitan tristearate. The emulsion is then suspended in an aqueous solution of a wall-former such as starch and spray dried.
