A method of evaluating the performance of separating and evaporation volatile material of a boiling apparatus used for the manufacture of beer or sparkling wine. The performance can not be evaluated conventionally. The evaluation method is characterized in that the exhalation speed coefficient of dimethylsulfate which exhales into a gas phase when wort is boiled by the boiling apparatus is used for the evaluation.
Cette invention se rapporte à un procédé qui permet d'évaluer les performances de séparation et d'évaporation de substances volatiles d'un bouilleur utilisé dans la fabrication de bière ou de vin mousseux. Ces performances ne peuvent pas être évaluées de manière traditionnelle. Ce procédé se caractérise en ce qu'on utilise, pour obtenir cette évaluation, le coefficient de vitesse d'exhalaison du diméthylsulfate qui s'exhale sous forme gazeuse lors du bouillage du moût par le bouilleur.
