The process has a high yield rate, and provides a number of high-quality fractions of the fenugreek seed including a soluble dietary fibre fraction, de-flavoured fenugreek seed, high-protein fenugreek meal, and dioscin and other saponins, along with the fenugreek oleoresins which have conventional commercial use.
