A method of grading fruit comprising the steps of supplying light; passing said light through a first polarizing means; passing said light to a fruit surface, and collecting light received from a plurality of positions on said fruit surface; passing said collected light through a second polarizing means set to polarize substantially at right angles to said first polarizing means; separating said received light into red, green and blue components; Generating an analogue electrical signal substantially proportional to said red,green and blue components; amplifying said analogue signals; converting said analogue signals to digital signals, and processing said digital signals to provide a colour based grade to said fruit.
