ABSTRACT OF THE DISCLOSURE This invention relates to a method of increasing the concentration and improving the quality of the coffee extract obtained from the fresh stage of countercurrent coffee percola- tion system. The extract in the fresh stage is maintained at a temperature below its boiling point and the pressure in the fresh stage is maintained below atmospheric. An increase in yield is thus obtained without subjecting the extract to excessive thermal degradation or extended cycle times.
