ABSTRACT OF THE DISCLOSURE The present invention relates to a method of making a new food product, based on a milk-ultrafiltration retentate. Said method consits mainly in a first milk concentration step by ultrafiltration and a second step of thermocoagulation of the obtained ultrafiltration retentate. The resulting products - of terrine type - constitute another object of the invention.
