The invention is directed to a process for producing a tea drink comprising the steps of: extracting tea leaves and adjusting the obtained tea extract to a pH of from 5.0 to 6.0; mixing nitrogen with the tea extract and applying a negative pressure of 0.01 MPa or more; subsequent to the step of applying a negative pressure, stabilizing the tea extract by maintaining it at atmospheric pressure for 30 seconds to 20 minutes; and during or after the stabilization step, adjusting the tea extract to a pH of from 5.5 to 6.5. The loss of aroma during the production process is suppressed, and a tea drink with a stable quality and an excellent aroma is produced.

L'invention porte sur un procédé de fabrication d'une boisson à base de thé comprenant les étapes consistant à : extraire des feuilles de thé et ajuster l'extrait de thé obtenu à un pH allant de 5,0 à 6,0; mélanger de l'azote avec l'extrait de thé et appliquer une pression négative de 0,01 MPa ou plus; après l'étape d'application d'une pression négative, stabiliser l'extrait de thé par son maintien à une pression atmosphérique pendant 30 secondes à 20 minutes; et pendant ou après l'étape de stabilisation, ajuster l'extrait de thé à un pH allant de 5,5 à 6,5. La perte d'arôme pendant le procédé de fabrication est supprimée, et une boisson à base de thé avec une qualité stable et un arôme excellent est obtenue.
