Cereal grains are put into a test tube containing a specific reagent solution and stirred. The thus obtained reaction solution is introduced into a cell. Then the cell is irradiated with light and the absorbance at a wavelength showing the peak absorbance and the absorbance within a wavelength in which the absorbance scarcely changes are detected. Based on the difference between these absorbance values, the freshness of cereal grains or beans is judged.

Selon l'invention, des graines de c~r~ales sont plac~es dans un tube de test renfermant une solution de r~actif sp~cifique et broy~es. La solution de r~action sp~cifique ainsi obtenue est introduite dans une cellule, puis irradi~e au moyen de rayonnements et l'absorbance ~ une longueur d'ondes pr~sentant le pic d'absorbance et l'absorbance comprise dans une longueur d'ondes dans laquelle l'absorbance change ~ peine sont d~tect~es. La fra¹cheur des graines de c~r~ales ou des haricots est jug~e en fonction de la diff~rence entre ces valeurs d'absorbance.
