ABSTRACT Process for chemically modifying starch in which a mixture of starch and a chemical starch modifying agent at a moisture content of above 10% is subjected to UHF radia- tion. This permits the modification to be carried out under moisture conditions such that problems of fire haz- ard, charring and unstable moisture content and unstable caking are avoided.
