A method of producing a reduced color dairy product that includes separating a dairy material into a first portion and a second portion, the first portion including at least about 30 weight percent, as determined by high pressure liquid chromatography at a detection wavelength of 280 nanometers, of the native and soluble protein from the dairy material and the second portion including at least about 50 weight percent of the coloring agent from the dairy material, and partially or fully deactivating at least some of the coloring agent present in the second portion.

L'invention concerne un procédé permettant de produire un produit laitier de couleur atténuée. Ce procédé consiste à séparer le produit laitier en une première et seconde partie, la première partie comprenant au moins 30 % en poids environ de la protéine native et soluble contenue dans le produit laitier, pourcentage déterminé par chromatographie en phase liquide haute pression à une longueur d'onde de détection de 280 nanomètres, et la seconde partie comprenant au moins 50 % en poids environ de l'agent colorant contenu dans la substance laitière ; et à désactiver partiellement ou complètement certains agents colorants au moins présents dans cette seconde partie.
