Abstract of the Disclosure An installation for the pasteurization and aseptic packaging of food pieces, comprises a positive displacement pump, a pasteurizer, a bleed-off device, control means for the bleed-off device, and an aseptic packaging machine. A liquid medium is added to the food piece prior to pasteurization, via an inlet pipeline, and liquid medium is withdrawn again at the bleed-off device via a bleed-off pipeline and, a lobe pump. The control means comprises a flow meter in the inlet pipeline, a flow meter in the delivery of the lobe pump, a ratio controller, and a speed controller controlling the speed of the lobe pump. This maintains a predetermined ratio between the liquid medium withdrawn from the flowstream at the bleed-off device, and the liquid medium added via the inlet pipeline.
