A method of producing glycogen is provided. The method comprises the step of heat- and pressure-treating a sugar-containing material under acidic conditions. The sugar-containing material is a polysaccharide or an oligosaccharide. Alternatively, che sugar-containing material is a plant material selected from the group consisting of Panax notoginseng, Yun Nan San-chi powder (trademark), Panax ginseng, wheat flour, soy bean, soy flour, shiitake, and coffee extract residue. Representatively, the glycogen includes a molecule having a molecular weight of 10,000 or less. The glycogen has a specific rotation of [.alpha.]D+197° and anomeric proton peaks at 5.37 ppm and 4.95 to 5.33 ppm in 1H NMR spectra.

Procédé de fabrication physico-chimique de glycogène qui comprend le stade de réchauffement d'une matière glucidique dans un milieu acide. La matière glucidique peut être un polysaccharide ou un oligosaccharide. En variante, la matière glucidique peut être une matière végétale sélectionnée dans le groupe constitué de Panax notoginseng, de Gennanbunsanshichi (R), de ginseng, de farine de blé, de tourteaux de soya, de farine de tourteaux de soya, de champignons shiitake et de résidu d'un extrait de café. Dans un cas typique, le glycogène est caractérisé en ce qu'il contient une molécule ayant un poids moléculaire égal ou supérieur à 10000, qui a une rotation spécifique de [ alpha ]D+ 197 DEG C et manifeste des crêtes de protons anomériques à 5,37 ppm et 4,95 - 5,33 ppm dans son spectre 1H par RMN.
