ABSTRACT Peptide sweeteners, namely, ?-L-aspartyl-L- phenylalanine lower alkyl esters, especially the methyl estex are prepared from the corresponding .beta.-lower alkyl ester by dissolving the .beta.-lower alkyl ester in a mixed solvent and effecting intramolecular ester exchange, the hydrochloride of the desired ester is crystallized out; this method avoids production of the bitter tasting .beta.-L- aspartyl-L-phenylalanine lower alkyl ester as a by-product.
