The invention is concerned with a method of preparing N-formyl-L-aspartic anhydride, comprising the steps of (a) reacting L-aspartic acid with acetic anhydride and formic acid in a molar amount at least 1.05 times that of aspartic acid, to form a suspension containing N-formyl-L-aspartic anhydride; and (b) centrifuging the suspension of N-formyl-L-aspartic anhydride obtained in step (a) to obtain a cake of N- formyl-L-aspartic anhydride, while (i) supplying the suspension to a separation device under a back pressure of at least 100 mmHg, (ii) releasing the back pressure when at least half of the suspension has been supplied, and (iii) filtrating and/or dehydrating the cake. The method according to the invention enables N-formyl-L- aspartic acid to be produced on an industrial scale, with less residual formic acid than conventional methods.
