ABSTRACT OF THE DISCLOSURE A process is disclosed for the preservation of the color of red meat or meat products or both, entailing contacting the meat or meat product or both with a noble gas, or a mixture of noble gases or a noble gas-containing mixture which contains at least one noble gas in a concentration greater than that normally found in atmospheric air.
