An improved method of marinating and reconstituting meat from trims of fish, poultry, pork, beef or the like comprises the steps of freezing the trims, adding marinade to the frozen trims and compressing the frozen trims to a sufficient pressure to lower the freezing point below the temperature of the frozen trims such that the marinade is diffused through the trims and purge is formed on the outer surface of the trims so as to hold the trims together.
L'invention porte sur un procédé amélioré de mise en marinade et de reconstitution de produits carnés à partir de chutes de poissons, de volaille, de porc, de boeuf ou analogues comprenant les étapes suivantes: congélation des chutes; adjonction de marinade aux chutes congelées; compression des chutes à une pression suffisante pour en abaisser le point de congélation au-dessous de la température des chutes congelées de manière à ce que la marinade diffuse dans les chutes et qu'un bouillon se forme à leur surface extérieure pour maintenir les chutes ensemble.
