ABSTRACT OF THE DISCLOSURE The disclosure relates to a method of producing proteins by fermentation using sulphite waste liquors, washing waters and the soluble portions which remain after distillation in the production of alcohol by fermentation. The proportion of assimil- able carbonaceous substances in the raw material is increased by adding up to about 10 per cent ethanol. The thus treated material is thereafter fermented using an inoculum which has previously been cultivated on the raw material or on a synthetic medium containing ethanol. The method has the advantage that it does not require a biological treatment of the raw material before producing the proteins.
