A pulp of milled agave plant heads are liquified during centrifugation and a polyfructose solution is removed and then concentrated to produce a polyfructose concentrate. Small particulates are removed by centrifugation and/or filtration and colloids are removed using termic coagulation techniques to produce a partially purified polyfructose extract substantially free of suspended solids. The polyfructose extract is treated with activated charcoal and cationic and anionic resins to produce a demineralized, partially hydrolyzed polyfructose extract. This partially hydrolysed polyfructose extract is then hydrolyzed with inulin enzymes to produce a hydrolyzed fructose extract. Concentration of the fructose extract yields a fructose syrup.

Le procédé de la présente invention consiste à liquéfier par centrifugation la pulpe d'une tête d'agave broyée, à en extraire une solution de polyfructose, et à la concentrer pour produire un concentré de polyfructose. On élimine les petites particules par centrifugation et/ou filtration, et on élimine les colloïdes par coagulation thermique. On obtient ainsi un extrait de polyfructose partiellement exempt de corps solides en suspension. On traite ensuite l'extrait de polyfructose au charbon actif ainsi que par des résines cationiques et anioniques, ce qui donne un extrait de polyfructose déminéralisé et partiellement hydrolysé. On hydrolyse ensuite l'extrait de polyfructose partiellement hydrolysé avec des enzymes d'inuline jusqu'à obtenir un extrait de fructose hydrolysé. En concentrant l'extrait de fructose, on obtient un sirop de fructose.
