Disclosed is a lactic acid production method by separating lactic acid produced in a culture solution by means of the fermentation culture of a microorganism. Specifically disclosed is a lactic acid production method, which comprises: a step (A) of filtering the culture solution through a nano- filtration membrane; and a step (B) of distilling a lactic-acid-containing solution produced in the step (A) under a pressure ranging from 1 Pa to the atmospheric pressure (inclusive) at a temperature ranging from 25 to 200˚C (inclusive) to collect lactic acid. The method can effectively remove an inorganic salt dissolved in a fermentation culture solution or contained in the fermentation culture solution in the form of a poorly soluble solid material by a simple manipulation, enables to prevent the racemization or oligomerization of lactic acid during the process of producing lactic acid, and therefore can produce lactic acid in a high yield.

L'invention porte sur un procédé de fabrication d'acide lactique par séparation de l'acide lactique produit dans une solution de culture au moyen de la culture de fermentation d'un microorganisme. De façon spécifique, l'invention porte sur un procédé de fabrication d'acide lactique qui comprend : une étape (A) consistant à filtrer la solution de culture à travers un membrane de nanofiltration ; et une étape (B) consistant à distiller une solution contenant de l'acide lactique, produite à l'étape (A) sous une pression se situant dans la plage allant de 1 Pa à la pression atmosphérique (incluse) à une température se situant dans la plage de 25 à 200°C (incluse) pour recueillir l'acide lactique. Le procédé permet d'éliminer efficacement un sel inorganique dissous dans une solution de culture de fermentation ou contenu dans la solution de culture de fermentation sous la forme d'une matière solide médiocrement soluble par une simple manipulation, permet d'empêcher la racémisation ou l'oligomérisation de l'acide lactique pendant le procédé de fabrication de l'acide lactique et, par conséquent, permet de produire l'acide dans un rendement élevé.
