By a method for producing lactic acid wherein culture of polyploid yeast having a capacity to produce lactic acid is filtered through a porous membrane having an average pore size of not less than 0.01 µm and less than 1 µm and the product is recovered from the filtrate, while the unfiltered liquid is retained in or returned to the culture and a fermentation feedstock is added to the culture, it is possible to remarkably and stably enhance the efficiency of production of lactic acid by fermentation for a long time at a low cost.

L'invention concerne un procédé de production d'acide lactique par fermentation continue caractérisé en ce qu'il comprend la filtration d'un milieu de culture liquide d'une levure hyperpolyploïde ayant la capacité de produire de l'acide lactique au travers d'une membrane poreuse dont le diamètre moyen de pore est de 0,01 µm ou plus, mais inférieur à 1 µm, la collecte du produit à partir du filtrat tout en maintenant le liquide non filtré dans le milieu de culture liquide ou en le soumettant à un reflux, et ensuite l'ajout du matériau de fermentation au milieu de culture liquide décrit ci-dessus. Selon ce procédé, le rendement de production d'acide lactique par la fermentation peut être remarquablement élevé dans un état stable sur une longue période et à faible coût.
