METHOD OF PRODUCING MINCED FISH MEAT ABSTRACT The present invention relates to a method of separating meat from fish in water or in an aqueous solution of alkaline salts, saccharide and/or amino acids. Hitherto the meat has been separated from the fish in air, such that the freshness of the meat has rapidly deteriorated. The present invention can prevent such a drawback. When the boiled fish paste is produced from fish meat which has been prevented from deter- iorating, it is possible to obtain a boiled fish paste of a higher jelly strength; in other words, a paste of a higher quality having a good texture.
