It is intended to produce a novel processed barley husk product by which richness, body taste, crispness and dry feel can be imparted to a food or a drink while regulating its burnt odor and cereal smell. To achieve this object, a processed barley husk product is produced by treating barley husk or a fraction containing the husk with a fluid at 160oC to 220oC under a low oxygen concentration.

Le but de cette invention est de produire un nouveau produit à base d'enveloppe d'orge transformée, permettant de conférer un goût riche et ayant du corps, du croustillant et une sensation sèche à un aliment ou une boisson, tout en régulant l~odeur de brûlé et l~odeur de céréale de ces derniers. Pour cela, un produit à base d'enveloppe d~orge transformée est fabriqué en traitant l~enveloppe de l~orge ou une fraction contenant l~enveloppe au moyen d~un fluide à 160 oC de 220oC, sous une faible concentration en oxygène.
