It is intended to provide a process for producing a large amount of a recombinant protein by the liquid culture method with the use of a koji mold as a host. Namely, a process for producing a recombinant protein by using a recombinant koji mold which is obtained by transforming a koji mold employed as a host, characterized by comprising culturing the recombinant koji mold in a liquid medium containing at least one starting material for the culture selected from among cereals which are entirely or partly surface-coated with the seed coat, beans and/or potatoes which are surface-coated with the outer skin, and amaranthus and/or quinua having been subjected to no pretreatment (for example, grinding or milling), and then harvesting the recombinant protein from the culture.

L'invention concerne un processus destiné à produire une grande quantité d'une protéine recombinante par un procédé de culture liquide avec l~utilisation d'une moisissure de koji en guise d~hôte. Plus précisément, l'invention concerne un processus destiné à produire une protéine recombinante par l'utilisation d'une moisissure de koji recombinante qui est obtenue par transformation d'une moisissure de koji employée en guise d~hôte, caractérisé en ce qu'il comprend la mise en culture de la moisissure de koji recombinante dans un milieu liquide contenant au moins une matière de départ pour la culture sélectionnée parmi des céréales qui sont entièrement ou partiellement recouvertes en surface du tégument, des haricots et/ou des pommes de terre qui sont recouvert(e)s en surface de l'épiderme, et de l'amarante et/ou de la quinoa n'ayant pas été soumises à un pré-traitement (par exemple, broyage ou concassage), et ensuite la récolte de la protéine recombinante à partir de la culture.
